This keeved masterpiece presents an opulent sensory profile of baked bittersweet apples, woven with threads of clarified honey and dried persimmon. The aroma is high-intensity, offering a rustic bouquet of leather and soft earthy funk. On the palate, a lush, natural sweetness is perfectly countered by the structural grip of traditional Devon tannins. It is a sophisticated, full-bodied expression of orchard terroir with a lingering, fruit-laden finish that defies its age with vibrant complexity and refined maturity.
Appearance. Deep amber to mahogany; brilliant clarity with a persistent, fine-beaded mousse and light lacing.
Aroma. High intensity; rich baked apple, caramel, and honey notes combined with rustic leather, earthy funk, and a hint of dried fruit esters.
Taste. Rich, succulent apple sweetness initially; complex bittersweet apple character with moderate spicy and earthy phenols; firm tannic bitterness provides balance; long, lingering sweet-tart finish.
