Wait Up is a quintessential American IPA that leans into the West Coast tradition with a crisp, lean profile. The aromatic profile is led by a bold interplay of Mosaic and Strata hops, delivering a complex bouquet of ripe passionfruit, juicy mango, and a distinct dankness. Centennial hops add a classic layer of pine resin and bright grapefruit zest, providing a timeless citrus backbone. The malt base provides a subtle, grainy backdrop that never interferes with the assertive bitterness. It finishes clean and remarkably dry, leaving a lingering trail of citrus pith and floral notes that invite another sip.

Appearance. Deep gold color (8 SRM). Brilliant clarity with a persistent, mousse-like white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma featuring layers of passionfruit, blueberry, and dank cannabis from the Mosaic and Strata, balanced by Centennial's grapefruit and pine. Low, clean, grainy maltiness with a neutral fermentation profile.

Taste. Hop-forward and assertive. Flavors of tangerine, resinous pine, and tropical stone fruit dominate. Medium-high to high bitterness that is firm and clean. Low cracker-like malt flavor supports the hop intensity. The finish is very dry and crisp with a lingering citrus aftertaste.
