Memory & Perception is an opulent Imperial Stout that showcases a decadent collaboration between Finback and Root + Branch. The sensory experience is lead by a deep, dark roast foundation layered with the rich, indulgent sweetness of condensed milk and maple syrup. Intense cacao nibs provide a bittersweet chocolate core, while toasted almond and shredded coconut offer a complex, nutty oiliness that coats the palate. At 12% ABV, the beer exhibits a profound depth, balancing roasted bitterness against a heavy, dessert-like profile. The result is a harmonious, velvety stout where the adjuncts amplify the natural dark fruit and espresso notes of the base style.

Appearance. Opaque, jet black (40+ SRM). Pours with a thick, dense, dark tan head that shows moderate retention and leaves significant lacing. High viscosity is apparent through prominent legs on the glass.

Aroma. High intensity and complex. Dominant notes of sweet maple syrup and cacao nibs are followed by distinct toasted coconut and nutty almond. A background of deep roasted malt provides espresso and bittersweet chocolate scents, accompanied by subtle dark fruit esters like prune and raisin. Alcohol is noticeable but smooth.

Taste. Intense and multifaceted. Initial flavors of chocolate-covered almonds and maple transition into a creamy mid-palate driven by condensed milk. The coconut provides a tropical, earthy richness that complements the high roasted malt character. Hop bitterness is moderate but masked by the significant residual sweetness and adjunct density. The finish is long, sweet, and warming with lingering notes of dark cocoa and wood-fired syrup.

Mouthfeel. Very full-bodied and chewy with a thick, syrupy viscosity. Low carbonation enhances the velvety, luscious texture. Significant alcohol warmth is present but well-integrated, providing a smooth glow without being harsh.
