Despite its sessionable strength, it maintains an assertive bitterness typical of the style. The palate is refreshed by a subtle, creeping heat from cayenne, which punctuates a dry, grainy malt finish. It is a modern, experimental take on the style, balancing traditional hop pungency with a crisp, refreshing, and spicy complexity.
Appearance. Medium gold with slight reddish-amber hues (8-12 SRM). Pours with a persistent, off-white head with good lacing; generally clear, though a light haze from spice oils may be present.
Aroma. High intensity hop aroma featuring the characteristic resin, earth, and grapefruit of Columbus hops. These are complemented by distinct spicy notes of ginger and the floral, berry-like scent of pink pepper. Very low, clean, grainy maltiness serves as a subtle background. Clean fermentation profile.
Taste. Initial impression is hop-forward and assertively bitter. Bold citrus and pine flavors from the Columbus hops lead, followed by the warming zing of ginger and a delicate peppery spice. The finish is dry and crisp, revealing a light, clean malt character. A late-onset, mild heat from the cayenne provides a unique spicy aftertaste that enhances the perceived bitterness.
Mouthfeel. Medium-light body with a smooth texture. Carbonation is medium-high, providing a refreshing, scrubbing effect. No alcohol warmth, but a noticeable and refreshing spicy tingling from the ginger and cayenne is present on the tongue.
