Aged in Old Trestle Distillery barrels, the sensory profile is elevated by nuances of toasted oak, vanilla, and a subtle spicy whiskey warmth. The palate is rich and luscious, balancing heavy roasted grains with a moderate hop bitterness and a lingering, vinous finish. The integration of high alcohol provides a smooth, comforting glow rather than harshness, making for a sophisticated, harmonious, and deeply contemplative drinking experience that highlights the brewery's masterful barrel-aging program.
Appearance. Jet black and opaque (SRM 40+) with a creamy, deep tan head. High viscosity is visible in the form of thick legs trailing down the glass after swirling.
Aroma. Intense and multifaceted, featuring prominent scents of roasted coffee and dark cocoa. Secondary aromas of prune and black currant are well-integrated with charred oak, vanilla, and a distinct spirit-forward character from the distillery barrels.
Taste. Bold flavors of dark chocolate, black licorice, and slightly burnt grain dominate the initial impression. The middle reveals layers of dried fruit and caramel, supported by a firm hop bitterness. The finish is long and bittersweet with a pleasant oak-derived tannin.
