This High West Bourbon barrel-aged Imperial Stout offers an opulent sensory experience defined by its extended maturation. Intense aromas of bittersweet chocolate and dark-roasted espresso from the complex malt bill merge seamlessly with the spicy rye-whiskey character and toasted oak of the High West Bourbon barrels. As it warms, subtle notes of vanilla, caramel, and dried dark fruits like figs and raisins emerge. The palate is decadently rich, balancing charred grain bitterness with a velvety malt sweetness. It concludes with a sophisticated, lingering warmth and a harmonious interplay of cocoa and refined spirit-forward complexity.
Appearance. Jet black and completely opaque (40 SRM). Pours with a thick, creamy, deep tan head that shows moderate retention and leaves significant lacing. Pronounced legs are visible, indicating high viscosity.
Aroma. High intensity with rich layers of dark chocolate, roasted coffee, and black licorice. The barrel aging contributes prominent vanillin, caramel, and spicy rye notes. Low esters of dried plum and raisin are present, while hop aroma is absent. Clean fermentation with a smooth, well-integrated alcohol presence.
Taste. Bold initial impression of bittersweet cocoa and espresso-like roast. The mid-palate reveals High West Bourbon influences of toasted marshmallow, caramel, and charred oak. Bitterness is medium-high but expertly balanced by the dense malt body. Finishes moderately sweet to off-dry with a long, warming aftertaste of roasted grain and fine whiskey.
Mouthfeel. Very full-bodied with a chewy, luscious, and velvety texture. Carbonation is low to moderate, providing a gentle lift to the heavy body. A notable, smooth alcohol warmth is present without being sharp or solventy.
