This 2017 vintage of Eclipse, aged in Belle Meade whiskey barrels, presents a sophisticated sensory journey through a well-matured Imperial Stout. The Totality base provides a massive canvas of bittersweet chocolate and espresso, further enriched by the addition of honey, which lends a subtle floral sweetness and silky depth. Extended aging has buffed the edges of its 11.9% ABV, transforming raw heat into a refined, integrated warmth. Aromas of spicy rye whiskey, toasted oak, and vanilla from the Belle Meade barrels meld seamlessly with dark fruit esters of prune and fig. On the palate, it is decadent and harmonious, finishing with a lingering, velvety complexity of charred oak and dark cocoa.

Appearance. Jet black and completely opaque. A thin, deep tan head forms but dissipates quickly due to high alcohol content and age, leaving a faint collar and oily legs on the glass. High viscosity is apparent when swirled.

Aroma. High intensity with a rich blend of bittersweet chocolate, roasted coffee, and dark fruit such as raisins and prunes. The Belle Meade barrel influence is prominent, offering notes of spicy rye whiskey, toasted oak, vanilla, and caramel. A subtle floral honey note adds complexity, while smooth alcohol and a faint vinous, port-like character from aging round out the profile.

Taste. Intense flavors of dark chocolate, black licorice, and heavily roasted grain. The honey provides a supportive sweetness that balances the medium-high bitterness. Barrel-derived notes of vanilla, oak tannin, and spicy whiskey are front and center. The mid-palate reveals layers of dried figs and plums. The finish is long and bittersweet, with a lingering warmth and a mellowed, woody aftertaste.

Mouthfeel. Full-bodied and chewy with a velvety, luscious, and coating texture. Carbonation is low, enhancing the beer's weight. A noticeable but smooth alcohol warmth is present, devoid of any harsh or solventy edges.
