Appearance. Deep purple to magenta (SRM 30+) with a vibrant, pink-tinted head that shows moderate to poor retention; slightly hazy but glowing with color.
Aroma. High intensity aromatics of fresh blackcurrant and dark berries, followed by a rustic, spicy rye malt character. Notable wild fermentation traits include leather and earthy funk, complemented by subtle toasted oak and a clean, lactic acidity.
Taste. An initial punch of tart blackcurrant leads into a complex middle of peppery rye and earthy tannins. The fermentation character is dry and funky, with minimal hop bitterness and a sharp, refreshing acidity. The barrel aging provides a delicate woody structure that balances the fruit. It concludes with a very dry, lingering berry finish.
Mouthfeel. Medium-light body with a slight silkiness from the rye; moderate to high carbonation provides an effervescent prickle. A light tannic astringency from the fruit skins and oak enhances the drying sensation.
