This complex Experimental Mead presents a vibrant fusion of foraged blackberries and wildflower honey. The aroma is dominated by deep, brambly fruit notes entwined with the distinct citrus and mandarin peel character of Eclipse hops. On the palate, a rich honey sweetness provides a sturdy backbone for the tartness of the berries, while a subtle, clean acidity lifts the finish. The Eclipse dry-hop addition contributes a refreshing resinous edge that balances the floral sweetness. Smooth and medium-bodied, this collaboration captures the essence of a wild hedgerow, finishing with a lingering, fruity resonance and gentle warmth.
Appearance. Deep purple to garnet hue; brilliant clarity. Minimal to no head formation, though a few fleeting bubbles may appear initially due to carbonation; no lacing.
Aroma. High intensity. Prominent dark berry aromas of ripe blackberries followed by floral, meadow-like honey. Distinctive hop character from Eclipse provides notes of sweet mandarin, citrus zest, and a hint of fresh pine. Very clean fermentation profile.
Taste. Initial honey sweetness is immediately met by a tart, slightly sour blackberry punch. The mid-palate features the mandarin and fruit-forward flavor of Eclipse hops. Bitterness is low, serving only to balance the honey. The finish is off-dry and lingering, with a crisp acidity and a final floral honey note.
Mouthfeel. Medium body with a smooth, slightly syrupy texture. Moderate carbonation provides a refreshing prickle. Noticeable but well-integrated alcohol warmth from the 8% ABV. No astringency from fruit skins or hops.
