This Double IPA presents an intense sensory interplay between tropical fruit and modern hop artistry. The addition of pineapple heightens the bright, citrusy punch of Citra hops, used both in the whirlpool and dry hopping to maximize aromatic impact. A subtle addition of Simcoe provides a grounded pine and passionfruit depth to the profile, preventing the fruit from becoming one-dimensional. Built on a simple grain bill, the malt remains clean and supportive, allowing the 7.9% ABV to integrate seamlessly with a smooth, medium-bodied texture. The result is a vibrant, fruit-forward experience where the sharpness of real pineapple complements the layered resinous and tropical hop character.
Appearance. Pale gold to light orange (7 SRM) with a noticeable haze. Features a dense, persistent, off-white head that leaves consistent lacing on the glass.
Aroma. High intensity hop aroma dominated by fresh-cut pineapple and citrus zest from the Citra hops. Secondary notes include pine resin and passionfruit from the Simcoe. A neutral, grainy malt character sits in the background alongside light fruity fermentation esters.
Taste. Initial impression is a burst of tropical pineapple and grapefruit. Citra provides orange and lime notes, while Simcoe adds a touch of earthy pine. Firm but smooth bitterness (approx. 65 IBU) balances the fruit. The finish is medium-dry with a lingering tropical hop aftertaste and a clean, soft malt backbone.
Mouthfeel. Medium body with a smooth, almost creamy texture. Moderate carbonation provides a gentle lift. Restrained, smooth alcohol warmth is present but well-integrated, with no hop-derived astringency.
