This Double IPA from Fidens Brewing Co presents a luscious, sensory-forward profile defined by a significant dry-hop addition of Galaxy and Mosaic. Aromatics lead with intense notes of overripe berries and sticky melon, seamlessly followed by the scent of fresh peach. The simple grist of 2-Row and flaked oats provides a soft, pillowy canvas that allows the hop oils to shine. On the palate, the Galaxy hops offer a vibrant stone fruit character, while the Mosaic contributes complex fruit layers and a hint of resin. It is a modern, hazy expression of the style, balancing a gentle bitterness with a smooth, velvety finish.
Appearance. SRM 4-6. Pale straw to light gold with a heavy, opaque haze. Large, persistent, creamy white head with dense lacing.
Aroma. High intensity hop-forward aroma. Dominated by overripe blueberries, cantaloupe, and ripe peach. Supportive background of bready, grainy malt with a clean fermentation profile and a faint hint of smooth alcohol.
Taste. Bold flavors of tropical fruit and stone fruit mirroring the aroma. Initial impression of peach and melon followed by a berry-like complexity. Moderate bitterness that is well-integrated and never harsh. Low malt sweetness with a soft, oat-driven cereal note. Finishes clean with a lingering hoppy aftertaste.
