Imperial IPA 8 º
This Double IPA showcases a saturated hop profile driven by an amplified grain bill and heavy-handed additions of Citra, Mosaic, and Galaxy. The aroma is a powerful blast of passionfruit, peach, and citrus zest, underpinned by a soft, doughy malt presence. On the palate, the intense tropical fruit character of Galaxy dominates, supported by the resinous berry notes of Mosaic and bright grapefruit from Citra. Despite its 8% strength, the beer maintains a smooth, approachable bitterness and a velvety texture characteristic of the brewery, finishing dry with a lingering essence of tropical fruit and pine.
Appearance. Deep gold to pale orange (6–8 SRM). Characteristically hazy with an opaque glow. Topped by a dense, persistent white head that leaves significant lacing on the glass.
Aroma. Intense hop-forward aroma featuring heavy tropical notes of passionfruit and mango from Galaxy, combined with blueberry and earthy pine from Mosaic. High citrus notes of lime and grapefruit from Citra are prominent. Malt is supportive and neutral, reminiscent of white bread or light flour.
Taste. High hop flavor follows the nose with dominant passionfruit, peach, and bright citrus. Bitterness is moderately high but remains soft and integrated, lacking any harshness. Malt provides a clean, soft, grainy base that balances the hops without adding sweetness. The finish is medium-dry with a long-lasting tropical hop aftertaste and a touch of clean alcohol.
Mouthfeel. Medium to medium-full body with a notable creaminess and smooth, pillowy texture. Carbonation is moderate. A light, pleasant alcohol warmth is present but well-integrated. No astringency.
