A base of selected barley and wheat malts provides a foundation of toasted biscuit, nutty toffee, and soft chocolate. The defining characteristic is the infusion of French oak chips, which imparts a subtle spice and the refined tannic structure associated with barrel-aged wines. This creates a unique sensory bridge between a classic brown ale and an aged vintage. The fermentation remains clean, allowing the interplay of caramel sweetness and earthy hop flowers to shine against a backdrop of delicate oak-driven dryness.
Appearance. Deep reddish-brown to dark copper in color (15–20 SRM). Displays good clarity and is topped with a moderate, persistent light tan head that leaves fine lacing on the glass.
Aroma. Moderate intensity featuring sweet malt notes of caramel, toasted nuts, and a hint of milk chocolate. The French oak contribution is evident through light vanillin and a subtle woody spice, complemented by low earthy hop notes and faint fruity esters.
Taste. The initial impression is of gentle malt sweetness, dominated by caramel, toasted bread, and hazelnuts. The mid-palette introduces a delicate wood-derived complexity and a touch of tannin reminiscent of fine wine. Bitterness is medium-low, balancing the malt without being sharp. The finish is medium-dry with a lingering nutty and slightly spicy oak aftertaste.
Mouthfeel. Medium-light body with moderate carbonation. The addition of French oak chips provides a very slight, pleasant tannic astringency and a structured grip on the tongue, though it remains smooth and approachable without any alcohol warmth.
