This vibrant Melomel presents a striking interplay between luscious honey and the sharp, zesty brightness of fresh raspberries. The aroma is dominated by high-intensity notes of ripe red berries, underpinned by delicate floral honey undertones. On the palate, a bold raspberry tartness provides an immediate, juicy impact that is expertly balanced by a smooth, lingering sweetness from the honey base. The fermentation is exceptionally clean, allowing the pure fruit character to shine without distraction. It finishes with a refreshing acidity and a persistent berry echo, capturing the essence of a sun-ripened harvest in a crisp, sessionable format.
Appearance. Vivid ruby-red to deep pink hue (15-20 SRM) with high clarity to a very slight haze from fruit solids. Pours with a thin, fast-dissipating white collar and minimal lacing.
Aroma. High intensity. Dominant fresh raspberry character with a jammy quality. Secondary notes of floral, wildflower honey. No hop or malt aroma; no diacetyl or sulfur. Clean fermentation esters.
Taste. Initial burst of tart raspberry juice followed by a smooth, moderate honey sweetness. The balance is slightly acidic but well-rounded. No hop bitterness or flavor. Finish is clean and fruity with a lingering tart-sweet berry aftertaste.
Mouthfeel. Medium-light body with a smooth, slightly silken mouthfeel. Moderate carbonation provides a lively, tongue-tingling sensation. Alcohol warmth is very low and well-integrated; no astringency.
