FERMENTIQUE Passage is a sophisticated Baltic Porter that expertly balances rich malt complexity with a lager-clean finish. The sensory experience is anchored by a robust profile of dark chocolate and roasted malt, supported by a subtle caramel sweetness that provides depth without being cloying. Notes of plum, raisin, and a hint of licorice emerge through the mid-palate, characteristic of its cool fermentation and extended conditioning. Despite its 6.5% ABV, it maintains a smooth, deceptive strength, offering a velvety journey into layers of deep toast and dried fruit. It culminates in a clean, lingering finish that leaves a refined impression of roasted coffee.
Appearance. Deep, dark brown with brilliant ruby-red highlights when held to light. Topped by a thick, creamy, persistent tan head that leaves significant lacing on the glass.
Aroma. High malt intensity featuring layers of dark chocolate, toffee, and toasted bread. Pronounced esters reminiscent of dried dark fruits such as prunes and black cherries, with a faint molasses note. Clean fermentation profile with no hop aroma.
Taste. Initial malt sweetness leads to flavors of dark chocolate, subtle caramel, and nutty toast. A smooth, Schwarzbier-like roasted character provides a robust backbone without any burnt or acrid notes. Complexity is enhanced by dark fruit esters and a hint of licorice. Bitterness is medium-low, just enough to balance the malt richness. The finish is dryish and smooth with a lingering aftertaste of roasted grain.
Mouthfeel. Medium-full to full body with a smooth, velvety texture. Carbonation is medium-high, providing a mouth-filling quality that prevents the beer from feeling heavy. Features a gentle, well-integrated alcohol warmth.
