This Wild Specialty Beer presents a vivid, tropical profile dominated by lush mango and smooth vanilla. The aroma bursts with ripe mango flesh and sweet vanilla bean, underscored by complex wild fermentation notes of light leather and earthy funk. On the palate, a sharp, refreshing acidity is tempered by the creamy vanilla, while the mango provides a depth of tropical fruit ester character. Despite its 8% ABV, the beer remains approachable, finishing with a balanced tartness and a lingering hint of stone fruit and spice. It is a bold, modern interpretation of a fruited wild ale that balances sweetness and acidity.
Appearance. Deep gold to vibrant orange with a persistent hazy opacity; pours with a thin, ivory-colored head that dissipates quickly, leaving minimal lacing.
Aroma. High intensity of ripe, pulpy mango and aromatic vanilla; supported by moderate lactic tartness and subtle wild yeast funk, featuring notes of hay and light citrus.
Taste. Initial sharp acidity of lemon and tropical fruit; the mango flavor is prominent and natural, melding with a creamy vanilla middle. Finishes dry with a lingering fruit skin tartness and a soft, spicy yeast character; very low bitterness.
Mouthfeel. Medium body with a slightly plush, creamy texture from the vanilla; moderate carbonation provides a gentle prickle, and a mild alcohol warmth is present but well-integrated.
