This Wild Specialty Beer is a decadent, dessert-inspired collaboration between Fermenterarna and Vault City. It leads with an intense, smoothie-like profile of ripe, pureed banana and rich, savory peanut butter aromatics. A deep foundation of sweet caramel and toasted cookie and cocoa flavors provides a thick, pastry-like base that counters the sharp, lactic acidity characteristic of a modern sour. Despite its complexity, the palate remains focused on the interplay between tropical fruit esters and indulgent confectionery notes. The result is a bold, velvety experience that mimics a liquid banana bread, finishing with a lingering, tangy sweetness and a touch of roasted nuttiness.
Appearance. Deep gold to dull amber; opaque with a thick, smoothie-like consistency. Minimal off-white head with poor retention, typical of high-adjunct sours, leaving light, patchy lacing.
Aroma. High intensity. Dominant aromas of overripe banana and creamy peanut butter are immediately apparent. Secondary notes of buttery caramel, vanilla, and digestive biscuit emerge, supported by a clean, sharp lactic tartness. Hop character is absent.
Taste. Initial impression is a burst of tart banana and savory nuttiness. A rich, mid-palate sweetness follows, featuring notes of salted caramel and cocoa-dusted cookies. The acidity is firm but integrated, preventing the sweetness from becoming cloying. Low to no hop bitterness. The finish is long and sweet-tart, reminiscent of banana-flavored candy and toasted nuts.
Mouthfeel. Medium-full to full body with a thick, creamy, and somewhat viscous texture. Carbonation is moderate. Alcohol warmth is negligible. Minimal astringency despite the high acidity.
