Appearance.Deep gold to light amber in color (SRM 6–9). Brilliant clarity with no visible sediment. Still or very low carbonation with no head formation or lacing.
Aroma.High aromatic intensity. Dominated by concentrated, ripe apple character with secondary notes of dried fruit, such as apricot and golden raisin. Subtle floral esters and a hint of spicy phenol from the apple skins are present. Clean fermentation profile with no sulfur or acetic notes.
Taste.Initial impression is sharply dry and acidic. Rich, deep apple flavors persist throughout the palate despite the lack of sugar.
