Fenetra Pavillon Honey is a sophisticated Saison that balances rustic grain character with elegant barrel maturation. The inclusion of bio Spelt provides a nutty, grainy backbone, while a full year in red wine barrels imparts a complex vinous profile and a refreshing, tart acidity. Refermentation with local honey from Pleva beekeepers introduces floral aromatics and a delicate sweetness that counterpoints the dry, highly attenuated finish. Expect a vibrant interplay between fruity Belgian esters and the spicy, earthy nuances of the wood, resulting in a medium-bodied farmhouse ale that is both deeply nuanced and exceptionally refreshing.

Appearance. Deep gold to amber with a slight copper hue; hazy appearance due to the addition of bio Spelt and being unfiltered. Features a long-lasting, dense, rocky ivory head with significant Belgian lace.

Aroma. High intensity featuring floral honey and vinous red wine notes. Moderate fruity esters of apricot and lemon peel are balanced by spicy black pepper yeast phenols. A subtle rustic, grainy malt character from the Spelt is present alongside light oak and a hint of lactic tartness.

Taste. Initial impressions of floral honey and red berries transition into a grainy, rustic palate. A bright, refreshing acidity from the year-long barrel aging defines the balance.
