Fehér Nyúl Pinessy is a complex Specialty IPA that marries a robust Red IPA base with the distinctively resinous notes of blue spruce and the refined warmth of a BenRiach whisky cask. This amber-crimson pour offers a multifaceted sensory journey, beginning with sharp, forest-floor pine and citrusy hops, enveloped in rich caramel malt. The influence of the single malt Scotch barrel introduces subtle layers of peaty smoke, vanilla, and oak, which meld seamlessly with the spruce needles. A firm, lingering bitterness and wood-derived tannins provide structure, leading to a warming, dry, and highly sophisticated finish.
Appearance. Deep copper-red to ruby-amber in color. Pours with a thick, off-white to light tan head that displays good retention and leaves delicate lacing. Mostly clear, with a brilliant warm glow and no significant turbidity.
Aroma. High intensity. Dominated by prominent resinous, fresh-cut pine and evergreen notes from the blue spruce infusion, accompanied by grapefruit and herbal hop aromas. A sweet, toasty malt backbone of caramel and toasted bread supports the intense pine, while the BenRiach cask contribution is apparent through subtle peat smoke, vanilla, and toasted oak.
Taste. Initial impression is a rich blend of toasted caramel malt sweetness and sharp, woodsy spruce. Medium-high hop bitterness quickly asserts itself, balanced by a bready and slightly nutty malt profile. Complex flavors of earthy peat, vanilla, and dry oak from the whisky barrel emerge in the mid-palate. Finishes off-dry to dry, with a lingering, clean bitterness, spruce resin, and a touch of warming spirit character.
Mouthfeel. Medium-bodied with a smooth, velvety texture. Carbonation is moderate. A gentle, warming alcohol presence is noticeable but well-integrated. A very light, pleasant wood-derived tannin astringency lends structure and dryness to the finish.
