This intriguing variation of a Straight Sour Beer presents an avant-garde fusion of a tart, baked apple sour braggot matured in BenRiach Scotch whisky casks. A sharp, lemony lactic acidity harmonizes beautifully with rich honeyed malt notes and caramelized baked apple esters. The aroma and flavor are highly complex, featuring a dominant bouquet of exotic Chinese Five Spice—highlighted by star anise, cinnamon, and clove—complemented by delicate oak, vanilla, and a whisper of Speyside malt whisky. Light-bodied yet structurally complex, this sour offers a refreshing, dry, and delightfully spiced finish that defies its sessionable strength.
Appearance. Deep gold to light amber (8-11 SRM). Hazy clarity with a fine mist of particulates. Small, off-white head with very poor retention, quickly collapsing to a thin collar due to high acidity and barrel aging. Very light, ephemeral lacing.
Aroma. High intensity aroma. Dominant, clean lactic sourness intermingles with rich honeyed malt notes from the braggot base and sweet baked apple. A pungent, exotic spice profile of Chinese Five Spice—notably star anise, cinnamon, and clove—is prominent. Nuanced oak, vanilla, and a faint whisper of peat smoke from the BenRiach barrel sit in the background. No hop aroma. Clean fermentation profile aside from lactic acid.
Taste. Sharp, clean lactic sourness is the initial impression, immediately balanced by a honey-like malt sweetness and caramelized baked apple flavors. The mid-palate is highly complex, dominated by the warming, earthy flavors of Chinese Five Spice (anise, clove, cinnamon). Hop bitterness is undetectable (0 IBU) with no hop flavor. Fermentation is clean and acidic, never vinegary. The finish is dry, crisp, and highly acidic, leaving a lingering aftertaste of spiced apples, vanilla oak, and a subtle touch of single malt Scotch whisky.
Mouthfeel. Medium-light body. Carbonation is moderate to high, creating an effervescent prickle. Despite the low ABV, there is a very light, pleasant alcohol warmth enhanced by the Chinese Five Spice. Crisp, puckering acidity with low astringency.
