Paupière du Ciel is a monumental Imperial Stout that presents a masterclass in barrel integration. Aged for twelve months in a sophisticated blend of Bourbon, Cognac, Brandy, and Rum barrels, the beer exudes an intoxicating aroma of dark chocolate, toasted coconut, and vanilla. The sensory experience is defined by its decadent complexity, where the charred oak of the barrels harmonizes with the deep, roasty bitterness of the malt. On the palate, luscious notes of cacao nibs and tropical coconut emerge, supported by a vinous warmth and hints of spiced rum. This is a viscous, velvet-textured stout with a lingering, spirit-forward finish.
Appearance.Color is jet black and completely opaque (SRM 40+). It supports a thick, dark tan head with moderate retention. High viscosity and alcohol content are evidenced by prominent legs on the glass.
Aroma.High intensity with a rich blend of bittersweet chocolate, espresso, and cocoa nibs. The barrel aging contributes layered notes of toasted coconut, vanilla, and caramel, alongside complex vinous esters and dried dark fruits like raisins and figs from the Brandy and Cognac influence.
Taste. The palate is intensely flavored, leading with dark chocolate and roasted grain. Mid-palate notes of toasted coconut and vanilla provide a sweet counterpoint to the charred oak and moderate hop bitterness. The finish is long and complex, featuring a smooth interplay of spirit-forward warmth, spiced rum, and lingering cocoa.
Mouthfeel.Very full-bodied, chewy, and velvety. The texture is luscious and coating with low carbonation. A noticeable and smooth alcohol warmth is well-integrated, providing a luxurious sensation without being sharp or solventy.
