Drôle D'Oiseau is a vibrant Berliner Weisse that pushes the boundaries of the style with a massive 200g/L addition of passion fruit, guava, and lime. The sensory profile is defined by an immediate, sharp lactic acidity that is further brightened by the zesty, citrus bite of lime. Passion fruit provides a punchy, tart tropicality, while the guava introduces a lush, exotic aroma and a subtle sweetness that rounds out the mid-palate. Beneath the intense fruit, a light doughy wheat malt provides a soft structure. Despite its higher 5.5% ABV, it remains exceptionally refreshing, finishing bone-dry with a lingering tropical tartness.

Appearance. Deep gold with a soft pinkish-orange haze; opaque due to the heavy fruit addition. Pours with a moderate white head that dissipates quickly to a thin ring, exhibiting the poor retention typical of high-acid beers.

Aroma. High intensity with a dominant, sharp lactic sourness. The bouquet is saturated with tropical notes of musky guava and pungent passion fruit, accented by a bright, piercing lime zest. Low bready wheat malt is detectable only in the background; hop aroma is absent.

Taste. A clean, powerful lactic sourness leads the palate, immediately joined by the intense fruit flavors of passion fruit and zesty lime. Guava provides a fleshy fruit character that adds complexity and a hint of sweetness before the finish. Low grainy wheat flavor provides a brief counterpoint to the acidity. Bitterness is undetectable, and the finish is very dry and crisp.

Mouthfeel. Medium-light body, feeling slightly more substantial than a traditional version due to the fruit solids and higher alcohol. High carbonation provides a prickly, effervescent sting that enhances the crisp acidity. Alcohol warmth is very low and well-integrated.
