This New World Cider presents a rustic, bone-dry profile that captures the essence of wild and backyard apple harvests from the Greater Yellowstone Ecosystem. At 7.5% ABV, it offers a refreshing yet substantial character, leading with a bright, crystalline acidity and delicate floral notes reminiscent of apple blossoms. The use of varied apple sources introduces a light phenolic complexity and a subtle tannic grip that balances the clean, vinous finish. Effervescent and crisp, the palate is defined by tart green apple and lemon zest with a lean, focused structure and no residual sweetness.
Appearance. Pale straw to light gold (SRM 2-4); brilliant clarity with a lively, effervescent carbonation that produces a brief white rim of bubbles before rapidly dissipating.
Aroma. Moderate to high intensity of fresh-pressed apple juice and green apple skins. Clean fermentation profile with delicate floral notes, a hint of lemon zest, and a subtle, earthy undertone typical of diverse backyard apple varieties.
