Fantôme de Noël is a complex, dark interpretation of a Saison, offering an evocative sensory profile for cold winter nights. The deep-roasted Chocolate malt creates a rich, dark brown appearance, while the aroma is a heady mix of honey, caramel, and pungent coriander. On the palate, a bold interplay of black pepper and herbal winter spruce provides a unique spiciness that cuts through the malt depth. Appearance. Deep maroon to dark brown (SRM 25–35) with a dense, long-lasting ivory to light tan head and excellent lacing. Unfiltered with a characteristic slight haze and vigorous effervescence.

Aroma. High intensity aromatic profile blending dark toasted malts and caramel with distinct spicy notes of coriander and black pepper. Prominent notes of honey and a subtle, earthy wild yeast funk are present, accompanied by a noticeable but well-integrated alcohol warmth and faint pome fruit esters.

Taste. Initial impression of deep-roasted chocolate malt and caramel sweetness that transitions quickly into a spicy mid-palate of black pepper and herbal spruce. A mild, tart sourness from wild yeast provides a bright counterpoint to the dark grain character. It finishes very dry and highly attenuated with a lingering spicy aftertaste and moderate hop bitterness.

Mouthfeel. Medium body with very high, effervescent carbonation. Significant alcohol warmth is present but smooth, avoiding harshness. The high attenuation prevents any cloying sweetness, resulting in a crisp, slightly prickly texture.
