Fantôme Blanche is a uniquely rustic expression of the Witbier style, capturing the idiosyncratic spirit of Dany Prignon’s farmhouse brewing. This sessionable ale leads with a vibrant, dominant lemon citrus character paired with an assertive barnyard funk that differentiates it from more sterilized commercial examples. Soft notes of sweet orange peel and peppery coriander emerge beneath the wilder elements. Built on a base of unmalted wheat and pale barley, it offers a delicate, grainy sweetness that balances the dry, refreshing tartness. It is an effervescent, complex, and highly artisanal take on a Belgian classic that remains remarkably light on the palate.
Appearance. 2-4 SRM. Very pale straw to light yellow in color. Brilliant cloudiness with a milky, whitish-yellow haze. Features a dense, white, moussy head with excellent retention and light lacing.
Aroma. High intensity of zesty lemon and citrus zest. Distinctive rustic barnyard funk and earthy yeast esters. Moderate bready, grainy wheat malt character with subtle notes of peppery coriander and sweet orange peel in the background.
Taste. Initial impression of tart lemon and crisp citrus fruitiness. Moderate grainy, bready malt flavor provides a soft foundation. Herbal-spicy flavors of coriander and orange zest are subtle and well-integrated. Low hop bitterness that supports a refreshingly crisp and dry finish. No harshness or lingering bitterness; instead, a light, earthy funk remains.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture from the wheat. High carbonation creates a lively, effervescent character. Very refreshing with a bone-dry finish and no perceptible alcohol warmth.
