This decadent Sweet Stout offers a rich and chewy sensory experience. Built upon a robust grist of Maris Otter, Crystal, and Flaked Oats, it unfurls with dominant aromas of fudge, caramel, and chocolate, accented by roasted depth from Carafa Special 3. Infused with dark Belgian candi syrup and lactose, the palate delivers a velvety, dessert-like sweetness balanced uniquely by a subtle, savory hint of Hebridean sea salt. Low floral, earthy notes from East Kent Goldings hops linger gently in the background. The result is a wonderfully complex, sweet, and lightly briney masterpiece with a comforting, full-bodied presence.
Appearance. Opaque black and very dark brown (SRM 38). Pours with a thick, persistent, creamy tan head that leaves dense, beautiful lacing on the glass.
Aroma. High intensity. Dominated by sweet milk chocolate, hot cocoa, and rich caramel fudge, backed by subtle dark-fruit esters from Belgian candi syrup. Mild roasted grain and espresso-like undertones. Clean fermentation profile with a nearly imperceptible, low earthy hop aroma and a mild, sweet dairy note from lactose.
Taste. Initial impression is highly sweet and creamy, bursting with chocolate-covered caramel, fudge, and sweet dairy flavors. Rich malt sweetness is countered by a mild, smooth roasted malt bitterness and a subtle, savory lick of sea salt that enhances the chocolate notes. Low earthy hop flavor. Medium-low bitterness provides just enough balance to keep the lactose and candi syrup from cloying. Finishes sweet, rich, and moderately long with lingering chocolate and salted caramel.
Mouthfeel. Full-bodied and exceptionally creamy, with a heavy, chewy texture enhanced by oats and lactose. Low to moderate carbonation. Smooth, light alcohol warmth is present but well-integrated, with absolutely no astringency.
