Fair Isle Brewing Orrorin

This Piquette-inspired Saison captures a wild, forest-edged elegance through the use of second-use Syrah grapes and foraged Fir tips. The sensory profile is defined by a vibrant interplay of citrusy limes and bright pomegranate, layered over a rustic, grainy malt backbone. The infusion of Syrah skins lends delicate notes of strawberries and soft, wine-like tannins, while the Fir tips provide a distinct resinous pine character that complements the spicy, peppery esters of the farmhouse yeast. Effervescent and bone-dry, it finishes with a clean, lingering acidity and a complex, herbal depth that reflects its Red Mountain AVA terroir.
Appearance. Pours a hazy, deep copper with a distinct rosy-pink hue from the grape skins (8–12 SRM). Topped by a dense, rocky, off-white to pale-ivory head with excellent retention and Belgian lacing.
Aroma. High intensity with a complex bouquet of fruity esters including pomegranate, lime zest, and strawberry. Subtle spicy phenols like black pepper are present, alongside a prominent resinous, woodsy pine note from the Fir tips and a faint, rustic graininess.
Taste. Initial impression is bright and acidic with pomegranate and citrus flavors. A soft, grainy malt presence supports the mid-palate, followed by strawberry and subtle grape-skin flavors. Hop bitterness is moderate but enhanced by the resinous Fir tips and soft tannins. The finish is exceptionally dry and highly attenuated with a lingering spicy, piney aftertaste.
Mouthfeel. Medium-light body with a very high, effervescent carbonation that provides a prickly sensation. Light alcohol warmth is present but well-integrated. Features a soft, drying tannin astringency that cleanses the palate.

It’s an exciting day, because we finally get to announce our collaboration brew with two wonderful Seattle bottleshops: Bottleworks and Full Throttle Bottles! A project months in the making, we’re thrilled with the outcome and can’t wait for you to taste what we all came up with.
Back in February, we had the fine folks from both establishments come to pull nails and taste through some barrels. After some deliberation, we decided on a blend of an oak-aged beer with second-use Syrah grapes sourced from the renowned Red Mountain AVA which brought a punchy fruit character into the mix.
Months later, we headed out to Fall City to forage for fresh new-growth Doug Fir tips. The distinctive lemon balm flavor of this choice Northwest ingredient adds a brightness to the beer, while providing earthy and herbaceous undertones. Expect pronounced strawberry and citrus aromas, a hit of pine, balanced acidity, and a signature Fair Isle dry finish.
Orrorin is the first iteration in a collaboration series we are forging with these two bastions of the Seattle beer scene. Each year we will embark on a new project, and much like its name suggests, Orrorin is the genesis of this evolving collection.
Not only are we pleased to collaborate with the folks at Bottleworks and Full Throttle, but we’re also grateful for their support through a tumultuous first few seasons at a brewery. It would have been a tough road without you sharing our saisons with your customers!
