Fair Isle Brewing’s Madrone is a rustic Saison that captures the essence of the Olympic Peninsula through the thoughtful integration of foraged Madrone bark and yarrow. The aroma is a complex tapestry of peppery phenols and stone fruit esters, supported by an earthy, woody depth from the bark. A subtle mineral salinity derived from Pacific Ocean sea water enhances the bright, citrusy fermentation character and the herbal, floral nuances of the yarrow. The palate is bone-dry and effervescent, showcasing a grainy malt base that yields to a lingering, spicy finish. This farmhouse ale is an evocative, highly attenuated expression of local terroir and traditional Belgian brewing techniques.
Appearance. Pale gold (6 SRM) with a slight, natural haze. Topped by a dense, rocky, long-lasting white head that leaves intricate Belgian lace on the glass. Highly effervescent with visible carbonation.
Aroma. High aromatic intensity featuring a blend of spicy black pepper phenols and fruity esters reminiscent of dried pear and lemon zest. A distinct earthy, woody undertone from Madrone bark mixes with the herbal, floral pungency of yarrow. Low earthy hop notes and a faint, grainy, cracker-like malt backbone are present, finished with a clean mineral hint from the sea water.
Taste. Initial impression is of bright citrus and spicy yeast, followed by a soft, grainy malt sweetness that is quickly overtaken by moderate bitterness. Foraged yarrow contributes a peppery, herbal depth, while the Madrone bark adds a subtle, tannic woodiness. A touch of Pacific Ocean salinity enhances the overall crispness and highlights the fermentation complexity. The finish is bone-dry and lingering with a spicy, mineral aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing scrub on the palate. Minimal alcohol warmth is present. The mouthfeel is exceptionally crisp and dry, with a faint mineral-driven structure and no cloying sweetness.

We had the pleasure of hosting Marika and Aaron of Scratch Brewing last August for a collaboration complete with a camping trip to the Olympic Peninsula. The result is a saison made with ingredients foraged from the Olympic Peninsula: Madrone Bark, Yarrow and sea water from the Pacific Ocean. 

Madrone has a delicate aroma of honey suckle followed by notes of mushrooms, baked apples and cinnamon. Brewed with a variety of malts from LINC in eastern Washington and a salt addition from the Pacific Ocean courtesy of the sea water, Madrone carries a full body while finishing dry. 

We first met Marika and Aaron in 2017 and bonded over our shared love for the outdoors, utilizing the abundance of ingredients around us and making beers that truly are an expression of the time and place we live.
