Lora (Batch 2) presents a vibrant, rustic interpretation of a Saison, defined by a lush infusion of raspberries and boysenberries. The sensory profile is a complex tapestry of bright, tart berry skin and deep bramble fruit, interwoven with the spicy black pepper and earthy funk provided by Fair Isle’s house blend of wild and feral yeasts. On the palate, a delicate lactic acidity from the bacterial fermentation sharpens the jammy fruit notes, leading into a bone-dry, highly attenuated finish characteristic of the style. The effervescent carbonation elevates the fruit-forward profile and rustic grain character, resulting in a refreshing and nuanced farmhouse ale experience.
Appearance. Deep pinkish-orange to light ruby hue (10–14 SRM) with a persistent, fine-beaded white to pale pink foam head and moderate lacing. Hazy appearance due to fruit solids and unfiltered wild fermentation.

Wanting to breathe new life into a blend of berries from the amazing Sidhu Farms in Puyallup, we took cues from the wine industry to create our first piquette style farmhouse ale – and we’re pleased as punch with the outcome.
Lora highlights the nuanced sweetness of these second-run blackberries, raspberries, and boysenberries while still letting the signature dryness of our house culture shine through. Three months in oak adds a soft hint of almond, and undertones of rosemary add complexity to the extremely refreshing, easy-drinking base beer.
The desire to conserve and use our resources more effectively as a brewery pushes us to be more creative, and it’s satisfying when the payoff is something as delightful as Lora. We’re excited for you to try this one.
