Inspired by the indulgence of tropical ice cream, this Wild Specialty Beer offers a lush, multi-layered sensory experience. A vibrant bouquet of passionfruit and zesty pineapple leads the aromatics, softened by the creamy, sweet depth of mango and peach. The addition of coconut and vanilla provides a luxurious, confectionery-like roundness that tames the sharp lactic acidity. Though categorized as a wild ale, the fermentation character is clean and supportive, allowing the dense fruit puree and botanical additions to dominate. It is a decadent, fruit-forward pour that balances vibrant acidity with a silky, dessert-like finish.
Appearance. Opaque, deep golden-orange hue reminiscent of blended fruit nectar (SRM 6-8). Pours with a thick, frothy, pale-yellow head that settles slowly into a dense collar; notable lacing due to high fruit solids.
Aroma. High intensity; immediate rush of tangy passionfruit and ripe mango. Distinctive notes of toasted coconut and sweet vanilla bean provide a creamy backdrop. Secondary notes of fuzzy peach and bright pineapple emerge as it warms, with a very faint, clean lactic tang and no hop character.
