CÉSAR is a luminous White IPA that marries the soft, pillowy texture of a high-wheat grist with a modern, vibrant hop profile. Composed of over 50% wheat, this brew delivers a luxurious creaminess that carries the complex aromatics of HBC 1019, Citra, and Nelson Sauvin hops. Expect a sensory journey of tropical melon and stone fruit from the HBC 1019, underscored by the bright citrus zest of Citra and the distinctive crushed-grape, vinous elegance of Nelson Sauvin. This Specialty IPA balances a firm bitterness with a refreshing, bready malt backbone, finishing smooth and inviting with a lingering fruit character.
Appearance. Pale straw to deep gold (3-6 SRM). Opaque and hazy due to the high wheat content. Large, persistent white head with dense lacing.
Aroma. High intensity hop aroma featuring tropical notes of melon and peach from HBC 1019, bright grapefruit and lime from Citra, and a distinct white wine or gooseberry note from Nelson Sauvin. Moderate bready, grainy wheat character with no yeast-derived esters.
Taste. Hop-forward initial impression with dominant flavors of honeydew melon, tropical fruit, and citrus. Low to medium-low bready wheat malt flavor provides a soft backbone. Medium-high bitterness that is firm but smooth. The finish is dry and clean with lingering notes of white grape and citrus zest.
Mouthfeel. Medium-full body with a notable creaminess and soft texture from the high wheat percentage. Moderate carbonation. Very light, well-integrated alcohol warmth without any astringency.
