Kill the Sun presents a formidable sensory experience, defined by its intensive Bourbon barrel aging. This Imperial Stout pours an opaque jet black, releasing a high-intensity aroma of espresso, dark chocolate, and molasses. The time spent in oak adds layers of charred wood, rich vanilla, and a distinct spirit-forward bourbon character that intermingles with esters of dried figs and raisins. On the palate, a velvety, full-bodied texture carries flavors of roasted malt and toasted caramel, balanced by a firm bitterness. The 12.5% ABV manifests as a smooth, well-integrated warmth that lingers alongside a bittersweet, cocoa-laden finish.
Appearance. Jet black and opaque (SRM 40+). It features a thick, deep tan head with moderate retention and significant viscosity, evidenced by visible legs on the glass.
Aroma. High intensity. Dominant notes of bittersweet chocolate and dark-roasted coffee are layered with esters of prune and black currant. Significant Bourbon character provides aromas of vanilla, caramel, and charred oak.
Taste. Initial impression is rich and decadent with flavors of espresso and cocoa. Malt character brings toasted bread and caramel sweetness, countered by firm hop bitterness and wood tannins. The bourbon barrel influence provides vanilla and a hint of coconut. It finishes with a lingering roast and smooth alcohol warmth.
Mouthfeel. Full-bodied and viscous with a velvety, chewy texture. Carbonation is low to moderate. A strong but non-solventy alcohol warmth is present, complemented by a slight oak astringency.
