Evoqesour #8 is a vibrant Wild Specialty Beer that prioritizes refreshment through a bright, balanced acidity. This interplay between the lactic tartness and the exotic fruit character creates a crisp, highly drinkable profile. Appearance. Pale straw to light gold (SRM 2–4). Pours with a moderate white head that dissipates relatively quickly, leaving light lacing. Distinctive haze from the addition of Guanàbana juice and wild fermentation.
Aroma. Moderate to high intensity. Prominent lactic tartness blends with a distinct tropical bouquet of soursop, featuring notes of pineapple and green apple. Very low grainy malt sweetness. No hop aroma. Subtle earthy funk may be present from the wild yeast.
Taste. Bright, clean acidity is the initial impression. The flavor is dominated by the Guanàbana, providing a multi-dimensional tropical fruitiness featuring tart citrus and sweet pineapple. Hop bitterness is very low, allowing the sourness to provide balance. The malt is a neutral, crackery background. Finishes very dry and crisp with a lingering fruit tang.
Mouthfeel. Light body with a prickly, high carbonation that enhances the perceived acidity. Very low alcohol warmth. A slight fruit-derived smoothness is present, though the overall impression is lean and refreshing with no significant astringency.
