Octave presents as a sophisticated Strong Saison, where the rustic charm of farmhouse tradition meets the sharp, vinous complexity of Foxwhelp apple juice. The mixed culture fermentation provides a deep, earthy funk and a bright, lactic acidity that carves through the medium-light body. Barrel aging introduces structural tannins and a whisper of oak, beautifully framing the vibrant pome fruit esters and the characteristic cracked black pepper spiciness. It is exceptionally dry and effervescent, offering a prickly mouthfeel that carries notes of tart green apple and leather into a long, crisp, and refreshing finish.
Appearance. Deep gold to pale orange (SRM 7-9) with a slight haze from the mixed culture and unfiltered nature. Topped by a voluminous, rocky white head with excellent persistence and intricate Belgian lacing.
Aroma. High intensity with a complex blend of tart green apple and citrus esters. Significant funky character featuring notes of wet hay, earthy leather, and mild barnyard. Moderate spicy phenols reminiscent of black pepper. Low oak-derived vanillin and a faint grainy malt backbone.
Taste. Initial sharp acidity from the Foxwhelp apples and mixed culture fermentation. Flavors of tart pome fruit and lemon zest harmonize with a rustic, grainy malt profile. Moderate spicy yeast character and light tannic oak. Bitterness is low, as the acidity balances the palate. Bone-dry finish with a lingering tartness and earthy funk.
Mouthfeel. Medium-light body with very high, effervescent carbonation that feels prickly on the tongue. Light, well-integrated alcohol warmth. Subtle tannic astringency from the apple skins and barrel aging provides structure.
