Eula Sidra Natural presents an authentic Basque cider experience, defined by a sharp, rustic profile. This traditional Spanish Cider leads with intense aromas of bruised green apples and a distinctive wild yeast funk, reminiscent of wet earth and weathered leather. On the palate, it is aggressively bone-dry and bracingly tart, showcasing high malic and lactic acidity that creates a puckering sensation. The character of local Asturian and Basque apples provides a tannic structure and a mineral-driven finish. Without the distraction of sweetness, the focus remains on the complex, slightly acetic fermentation character and the clean, refreshing snap of a heritage orchard product.
Appearance. Pours a pale straw to deep gold color (SRM 2-4). Naturally cloudy and unfiltered with a persistent haze. When poured traditionally from a height, it produces a brief, frothy white mousse that quickly dissipates into a still liquid with no lingering head or lacing.
Aroma. High intensity with a dominant sharp apple character. Pronounced rustic funk from wild yeast (leathery, earthy notes) is complemented by a noticeable but controlled volatile acidity. Subtle notes of wood and cellar-like mustiness are present, with no hop or malt aroma.
Taste. Initial impression is bracingly sour and bone-dry. The flavor is centered on tart apple skin and pithy fruit solids. High acidity (malic and lactic) dominates the mid-palate, while a subtle tannic astringency provides structure. The finish is very clean and extremely dry, with a lingering mineral and slightly acetic aftertaste. No perceptible sweetness or bitterness.
Mouthfeel. Light to medium-light body with a lean, watery texture. Carbonation is naturally very low (still), though it feels lively on the tongue if aerated during the pour. No alcohol warmth; slight puckering astringency from fruit tannins.
