Specialty Beer 7 º 22 IBU
This Alternative Sugar Beer presents a sophisticated interplay between rustic grains and wildflower honey. Crafted with a blend of malted barley, wheat, and oats, it offers a soft, cereal-forward foundation that allows the flower honey to shine without becoming cloying. The Galena hops provide a clean, subtle bitterness that anchors the floral aromatics and supports the high attenuation. Despite its 7% ABV, the profile remains dry and remarkably refreshing, showcasing a delicate perfume of nectar and blossoms. The result is a balanced, honey-infused ale that respects its fermentable origins while maintaining a crisp, drinkable character.
Appearance. Pale gold to light amber (SRM 5-8). Displays a creamy, off-white head with moderate retention and fine lacing. Clarity is generally clear, though a very slight, silky haze from the wheat and oats may be present.
Aroma. Moderate to high intensity. Prominent delicate floral honey notes reminiscent of wildflower nectar and meadow grass. The malt character provides a soft background of bready wheat and grainy oats. Hop aroma is low, offering light earthy or floral notes from the Galena. Clean fermentation profile with minimal esters.
Taste. Initial impression of honeyed sweetness that quickly transitions to a dry, crisp finish. Malt flavors are bready and slightly nutty. Galena hops offer a mild to moderate bitterness that balances the honey character without becoming aggressive. Distinctive floral honey flavors persist into the aftertaste, which is clean and well-attenuated.
Mouthfeel. Medium body with a notable smoothness and light creaminess derived from the oats and wheat. Carbonation is moderate-high, enhancing the refreshing and lively quality. A light, well-integrated alcohol warmth is present. No perceived astringency.
