This opulent Imperial Stout presents a masterful blend of fresh and barrel-matured ales, having rested for a year in 15-year whisky casks. The sensory journey begins with an intense bouquet of dark cocoa and roasted coffee driven by Chocolate Malt and Carafa Special II, seamlessly interwoven with the vanilla and toasted oak signatures of the barrel. Golden Promise malt provides a sturdy foundation for the earthy, resinous bitterness of Galena hops. On the palate, a lush, velvety texture emerges from the generous use of malted and flaked oats, balancing the 11% warmth with a sophisticated, slightly dry finish.
Appearance. Jet black and completely opaque (SRM 40+). Topped with a thick, creamy, and persistent deep tan to brown head that leaves significant lacing on the glass.
Aroma. High intensity with a rich profile of espresso and bittersweet chocolate. Prominent 15-year whisky notes contribute vanilla, charred oak, and a spirit-like sweetness. Low esters of dried plum and fig are present, while Galena hops offer a very low earthy backdrop.
Taste. Initial impression is of intense roast, featuring dark chocolate and burnt coffee beans. A complex mid-palate follows with vanilla, oak tannins, and a distinctive whisky warmth. Medium-high bitterness is well-supported by the deep malt extract. The finish is lingering and complex, transitioning from rich chocolate to a refined, slightly dry woodiness.
Mouthfeel. Full-bodied and unctuous with a viscous, chewy texture. Carbonation is low and fine. A significant, smooth alcohol warmth is present but well-integrated. The use of oats provides a notable creaminess and silkiness with minimal astringency.
