Espiga / Beer Mosaic Three In One
This celebratory Double IPA presents a vivid sensory profile defined by an intensive use of Mosaic hops. Pouring a hazy, golden yellow with a dense, creamy white head, it immediately releases high-intensity aromas of ripe mango, sweet white melon, and bright citrus. The palate follows suit, delivering punchy tropical fruit flavors balanced against a complex grain bill of wheat and oats, which provides a notably silky, soft texture. Despite the robust 10% ABV and firm bitterness, the finish remains remarkably dry and clean, showcasing the versatile character of the Mosaic variety without any heavy residual sweetness or harshness.
Appearance. Golden yellow (approx. 6 SRM) with a distinct hazy to opaque appearance. Topped with a thick, white, creamy head that shows excellent persistence and leaves significant lacing.
Aroma. Intense and hop-forward, dominated by Mosaic hop characteristics of mango and tropical fruit, alongside white melon and a sharp citrus edge. Background malt is neutral and slightly grainy, with a soft, doughy hint from the oats and wheat. Clean fermentation profile with a light, pleasant alcohol presence.
Taste. Initial impression is a burst of tropical mango and melon. Hop flavor is very high, showcasing citrus zest and stone fruit. Bitterness is firm and assertive but smooth, supported by a soft, bready malt backbone of barley and wheat. Finishes quite dry with a long, lingering resinous and fruity aftertaste.
Mouthfeel. Medium-full body with a characteristically silky, creamy texture derived from the heavy use of flaked oats and wheat. Carbonation is moderate. A noticeable but well-integrated alcohol warmth is present, without being harsh or solventy.
