This effervescent Wild Specialty Beer, rooted in the Berliner Weisse tradition, offers a captivating tropical profile. The interplay between dragon fruit and passion fruit creates an exotic, aromatic bouquet that leads into a refreshing sensory experience. Lactobacillus fermentation delivers a clean, sharp lactic acidity, which is expertly balanced by the delicate, doughy sweetness of wheat flakes and Pilsner malt. The addition of Galena hops provides a restrained bitterness, ensuring the tart fruit character remains the focus. With its pale yellowish hue and fine bubbles, this low-ABV sour combines crisp acidity with a lingering, exotic fruit finish that is both bright and sophisticated.
Appearance. Pale yellowish (2-3 SRM) with a slight haze from wheat flakes and fruit additions. Features fine bubbles and a white, fizzy head with moderate to low retention.
Aroma. High intensity tropical fruit aromatics featuring the sharp, tangy scent of passion fruit and the more delicate, exotic floral notes of dragon fruit. A clean, lemony lactic character from Lactobacillus fermentation is evident, supported by a faint bready wheat malt background. No hop aroma.
Taste. Assertive but clean lactic sourness provides the initial impression, followed quickly by the zesty flavor of passion fruit. The dragon fruit adds a subtle earthy sweetness in the mid-palate. Low hop bitterness from Galena is barely perceptible. The finish is crisp, dry, and refreshing with a lingering tartness and fruit esters.
Mouthfeel. Light body with a high level of carbonation that creates a spritzy, tongue-tingling sensation. Very low astringency from the fruit skin or seeds. No alcohol warmth, making it highly drinkable.
