TABA Nelson is a refined Saison that bridges the gap between classic farmhouse traditions and modern hop exploration. This vibrant golden ale highlights the distinctive character of hand-selected Nelson Sauvin hops, delivering elegant notes of white Riesling grapes, zesty citrus, and soft apricot. Fermented with the brewery’s proprietary There and Back Again cultures, it offers a sophisticated profile of pleasant funk and crisp apple, supported by a gentle, balanced acidity. The slow souring process and extended bottle conditioning result in a bone-dry, highly effervescent experience. It masterfully balances rustic microorganisms with the wine-like complexity of Nelson Sauvin, creating a refreshing, nuanced, and exceptionally drinkable farmhouse ale.
Appearance. Vibrant golden yellow (6 SRM). Unfiltered with a persistent haze. Pours with a dense, rocky, white head that exhibits excellent retention and thick Belgian lacing. Highly effervescent with visible rising carbonation.
Aroma. High intensity with a complex aromatic mix of white grape, gooseberry, and apricot from the Nelson Sauvin hops. Yeast-derived esters of crisp apple and pear are prominent, complemented by a moderate, pleasant funk and a low, peppery phenolic spice. Malt character is low and grainy-sweet.
Taste. Begins with a brief flash of grainy malt before transitioning into a dry, complex mid-palate of white wine, citrus, and stone fruit. Moderate hop bitterness is well-integrated with a light, refreshing acidity. Fermentation character provides a rustic funk and spicy black pepper notes. The finish is bone-dry and crisp with a lingering tartness and grape-like aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation that provides a prickly, refreshing sensation. Very low alcohol warmth. Highly attenuated and crisp with no astringency, despite the slight acidic lean.

We’ve been working hard behind the scenes to create a reproducible process that produces a beautiful and elegant farmhouse ale that is dry, slightly tart, full of flavor, and super drinkable. The interplay of our slow souring process, its respective microorganisms, hops, bitterness, gravity manipulation, and minerality have been through countless iterations over the years. We took our There and Back Again cultures and allowed it ferment over several months before dry hopping it with Nelson. We then bottle conditioned it for several months prior to today’s release. TABA Nelson is something for the beer and wine drinker alike. It pours a vibrant golden yellow releasing aromas and flavors of balanced citrus, white riesling grapes, apricot, pleasant funk, and crisp apple all wrapped up in a finish that offers an incredibly #balancedacidity. Unfiltered, unpasteurized, naturally carbonated, it will continue to evolve over time if properly cellared.
