This elegant Saison showcases a vibrant marriage of Equilibrium’s farmhouse mixed culture and luscious additions of pomegranate and plum. Brewed with white wheat and Strata hops, it delivers a sensory experience defined by stone fruit, plum jam, and tart pomegranate. The Strata hops contribute a layer of floral and berry-like nuances that complement the complex raspberry notes. Bone-dry and effervescent, it features a balanced acidity and a distinct, lingering minerality. The bready backbone of the white wheat provides structure without weight, resulting in an approachable, sophisticated beverage that harmonizes rustic farmhouse character with bright, tart fruit.
Appearance. Pale pinkish-gold to light copper (8–10 SRM) with a slight fruit-induced haze. Pours with a dense, rocky, off-white to pale pink head that shows excellent retention and Belgian lace.
Aroma. High intensity. Prominent pomegranate and plum fruitiness blends with moderate spicy and peppery yeast phenols. Strata hops offer floral and berry notes. The malt is low but present as a soft, grainy white wheat character, while the mixed culture adds a light, clean lactic tartness.
Taste. Initial tartness of pomegranate and raspberry. Malt flavor is low, providing a soft bready quality from the white wheat. Hop flavor is moderate, featuring the floral and tropical fruit character of Strata. Bitterness is moderate but perceived as crisp due to the very high attenuation and balanced acidity. Finishes bone-dry with a lingering minerality and stone fruit aftertaste.
Mouthfeel. Medium-light body with a very high, effervescent carbonation. Minimal alcohol warmth. Crisp and refreshing with a light, clean acidity and no astringency.
