This collaboration between Equilibrium and 3 Sons presents an indulgent Imperial Stout designed as a liquid dessert. The sensory profile is headlined by Madagascar Vanilla and rich caramel, meticulously evoking the nostalgic aroma of a vintage ice cream shop. Layers of toasted almond and marshmallow fluff provide nutty complexity and sugary depth against a foundation of deep roasted malts and dark cocoa. The experience is defined by an exceptionally viscous texture, mimicking melted fudge and caramel swirl bars. While the 11% ABV provides a smooth, integrated warmth, the focus remains on the harmonious balance of sundae-inspired adjuncts and a robust, pitch-black malt backbone.
Appearance. Jet black and completely opaque (40+ SRM). Features a thick, creamy, caramel-colored head with moderate retention and significant lacing. High viscosity is evident through visible legs on the glass.
Aroma. High intensity with a decadent bouquet of sweet caramel and Madagascar Vanilla. Prominent notes of toasted almond and marshmallow fluff are supported by a base of dark chocolate, espresso, and light char. Esters are low, and hop character is negligible.
Taste. Initial impression is intensely sweet and dessert-like. Dominant flavors of liquid caramel and vanilla cream meld into rich fudge and toasted nuts. The malt profile offers supporting notes of dark chocolate and toasted grain. Bitterness is low-moderate, providing just enough structure to balance the high residual sugar. The finish is long, sweet, and lingering with notes of burnt sugar and marshmallow.
Mouthfeel. Very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present, consistent with its high gravity, but remains well-integrated without being sharp.
