Austin Plum is a sophisticated Saison that marries the rustic elegance of a farmhouse ale with the vibrant, tart intensity of fresh fruit. Refermented on plums at a generous rate of two pounds per gallon, it presents a vivid stone-fruit profile that intertwines with the brewery’s signature microorganism-driven funk. Expect a delicate interplay between pale, grainy malts and a bright, lactic acidity that sharpens the palate. The fermentation character is complex, offering subtle spicy phenols and earthy, wild notes. Effervescent and bone-dry, this unfiltered ale finishes with a refreshing, lingering tartness and the nuanced essence of dark plum skins.

Appearance. Pours a hazy, pale gold with a soft, mauve-tinted hue from the plums (approximately 6-8 SRM). It is topped by a dense, rocky white head that shows excellent retention and leaves intricate Belgian lace. Unfiltered and naturally carbonated.

Aroma. High intensity with a dominant aroma of fresh, tart plums and stone fruit. Beneath the fruit lies a complex web of farmhouse character: moderate spicy phenols resembling black pepper, earthy funk, and a light, grainy malt backbone. Hop aroma is low, providing a faint floral touch.

Taste. The initial impression is bright and tart, featuring a sharp plum acidity that leads into a delicate, grainy malt base. Fermentation character is pronounced, with citrusy esters and a pleasant funk of leather and earth. Hop bitterness is low, as the lactic tartness provides the primary balance against the dry malt. The finish is bone-dry and crisp with a lingering, tangy stone-fruit aftertaste.

Mouthfeel. Medium-light body with very high carbonation, creating a lively, effervescent, and prickly sensation on the tongue. There is a light, pleasant astringency from the plum skins and a mild, clean acidity. Alcohol warmth is light and well-integrated.
