This winter-strength Belgian Pale Ale presents a sophisticated amber-ruby hue, reflecting its abbey heritage and seasonal character. Brewed by Brouwerij Roman, it offers a rich malt profile featuring toasty and bready notes with hints of honey. The sensory experience is defined by a pronounced fruitiness, suggesting ripe pears and dark stone fruits like plums, intertwined with a delicate blend of added winter spices. Refermentation in the bottle provides a vibrant effervescence that balances the slightly sweet palate and 8.5% alcohol. The result is a complex, warming ale with a lingering, fruit-forward finish that highlights its traditional top-fermentation roots.
Appearance. Deep amber to ruby-red (14–18 SRM). Brilliant clarity with a dense, creamy, off-white rocky head that demonstrates excellent retention and lacing.
Aroma. Moderately high intensity. Bready and toasty malt character dominates initially, accompanied by honey-like sweetness. Significant fruity esters of pear, orange, and plum are evident. Low spicy and floral hop notes are present, complemented by a distinct but well-integrated bouquet of holiday spices and a soft, warming alcohol presence.
Taste. Initial soft, moderately malty sweetness with biscuit and light caramel flavors. A complex layer of fruitiness—including orange zest and dried fruit—melds with spicy phenolic notes and added winter spices. Medium-low bitterness provides a gentle counterpoint to the malt-forward profile. The finish is balanced to slightly sweet, with a long, fruity aftertaste.
Mouthfeel. Medium-full body with a smooth, velvety texture. Carbonation is medium-high and lively from bottle refermentation. A noticeable, pleasant alcohol warmth is present, without any harshness or astringency.
