This vibrant Double IPA showcases a masterful selection of Southern Hemisphere hops, led by a massive addition of Galaxy and Nelson Sauvin. The sensory profile opens with an intense bouquet of ripe stone fruits and sharp citrus, layered with nuances of freshly cut herbs and white wine grapes. A supportive, neutral malt backbone provides the canvas for these powerful hop oils. While the body is described as ample and dense, the beer remains remarkably digestible, finishing with a sustained, clean bitterness. At 8% ABV, a smooth alcohol warmth integrates seamlessly, highlighting a complex interplay between tropical sweetness and a crisp, dry finish.
Appearance. Deep gold to light orange (approx. 8 SRM). Displays a moderate-sized, persistent off-white head with fine lacing. Clarity is mostly clear, though a light, acceptable haze may be present due to the massive dry-hopping.
Aroma. Intensity is high, dominated by modern New World hop characteristics. Aromas of ripe peach, passionfruit, and mango from Galaxy are prominent, coupled with Nelson Sauvin’s signature white wine grape and freshly cut grass. A neutral, grainy-sweet malt presence sits in the background. Fermentation is clean with very low fruity esters.
Taste. Strong, complex hop flavors of citrus zest, gooseberry, and stone fruit lead the palate. Bitterness is high but smooth, providing a firm balance against a soft, supportive bready malt character. The fermentation is clean, leading to a medium-dry finish that is neither heavy nor sweet. A lingering, clean bitterness and hop resin persist in the aftertaste.
Mouthfeel. Medium-full body with a dense, smooth texture that provides a significant mouthcoating. Carbonation is moderate-high. A light, clean alcohol warmth is noticeable but well-integrated, with no harsh hop astringency.
