This avant-garde Wild Specialty Beer presents a complex tapestry of botanical and fermentation-driven nuances. Derived from a base of beet molasses spirit fermented with Belgian Saison yeast, the profile opens with high-intensity aromatics of resinous douglas fir needles and zesty pomelo. The palate is defined by the sharp, tart snap of green gooseberry and the earthy, floral depth of oolong tea. Toasted birch shavings impart a subtle, woody structure, while the yeast contributes characteristic peppery phenols. At 10% ABV, it carries a sophisticated warmth, finishing bone-dry with a lingering, tannic elegance and a delicate wild funk.
Appearance. Pale straw to golden amber hue with a slight, natural haze. Pours with a fine-beaded white head that dissipates quickly to a thin collar; minimal lacing due to high alcohol and botanical oils.
Aroma. High intensity and profoundly complex. Immediate notes of resinous pine and citrus zest from douglas fir and pomelo. The Belgian Saison yeast provides spicy white pepper and clove esters, supported by the floral, earthy aroma of oolong tea. A faint lactic tartness and subtle toasted wood notes round out the bouquet.
Taste. A sharp, acidic entry featuring green gooseberry and tart citrus. Mid-palate reveals layers of earthy tea and a resinous, herbal backbone. The beet molasses provides a unique mineral depth rather than sweetness. Hop bitterness is negligible, replaced by a firm, wood-derived and tea-tannin structure. The finish is exceptionally dry and clean, with a lingering botanical aftertaste.
Mouthfeel. Medium-light body with a crisp, effervescent carbonation. Significant alcohol warmth is present but well-integrated. A noticeable but pleasant tannic astringency from the tea and birch shavings enhances the perceived dryness.
