This Imperial Stout presents a masterful intersection of dark, roasted intensity and vibrant, vinous complexity. Aged for two years in Frederiksdal cherry wine barrels, the beer absorbs deep character from organic Stevnsbær sour cherries sourced from the Johannesmark orchard. The sensory experience opens with decadent layers of bittersweet chocolate and vanilla, providing a lush, velvet-like base. As the palate develops, the Birgitte cherries introduce a bright, tart acidity and concentrated stone fruit richness reminiscent of a traditional Oude Kriek. The finish is remarkably complex, balancing the smooth warmth of the high alcohol with a lingering, fruit-driven elegance and structured tannins from the extended wood contact.
Appearance. Jet black and opaque (SRM 40+). It features a thick, deep tan to dark brown head with moderate retention. High viscosity is clearly visible as thick legs on the glass.
Aroma. High intensity with a complex blend of bittersweet chocolate, roasted cocoa, and dark-roasted coffee. The fruit character is profound, showing intense sour cherry, red wine, and dried plum. Secondary notes of vanilla, oak, and a subtle vinous tartness dominate, with hops being undetectable.
Taste. Initial impression is rich and sweet with flavors of dark chocolate and vanilla. This quickly gives way to an explosive Stevnsbær cherry character that is both sweet and tart. Medium-high roasted malt bitterness is present but balanced by the fruit acidity and residual sugars. The finish is exceptionally long and complex, featuring a lingering cherry-skin tartness, port-like oxidation, and smooth alcohol warmth.
Mouthfeel. Full-bodied and viscous with a chewy, velvety texture. Carbonation is low to moderate. A significant, smooth alcohol warmth is present without being hot or solventy. Light tannic astringency from the wood and cherry skins adds structure.
