This vibrant Saison showcases the debut of the New Zealand-isolated Wilding yeast, delivering a distinctively funky and fruity farmhouse character. The profile opens with a rustic complexity, blending notes of pome fruit and citrus with a delicate undercurrent of wild-derived spice. A base of light malt provides a soft, grainy foundation that supports the expressive phenols of the yeast without intruding on the dry, refreshing finish. A subtle hoppy presence provides a clean, floral counterpoint to the wild fermentation notes. Effervescent and highly attenuated, it captures the spirit of the Hunterville wilderness, balancing traditional Belgian-style rusticity with a uniquely local, southern hemisphere yeast-driven soul.
Appearance. Pale gold to deep orange with a hazy, unfiltered appearance; supports a dense, rocky, long-lasting white head with significant Belgian lacing.
Aroma. Moderate-high intensity featuring a complex blend of fruity esters—specifically pear and lemon zest—alongside moderate spicy phenols reminiscent of cracked black pepper. A distinctive wild funk adds rustic depth, while a light, grainy malt aroma provides a subtle backing. Low floral hop notes are present in the background.
Taste. The initial impression is highly attenuated and bone-dry. Tart citrus and stone fruit flavors dominate the mid-palate, followed by a sharp, spicy yeast character and a hint of rustic funk. Malt flavor is low and softly grainy. Hop bitterness is moderate but accentuated by the dry finish, leaving a lingering, spicy, and earthy aftertaste.
Mouthfeel. Light to medium-low body with very high, effervescent carbonation that creates a prickly sensation on the tongue. A subtle, well-integrated alcohol warmth is present, finishing with a clean, non-astringent dryness.

Earlier this year Froth Technologies approached us asking if we wanted to be involved in this project and we jumped at the opportunity to be the first brewery to use this new, native, commercial beer yeast isolate. Froth Technologies captured this yeast with an air trap on the banks of the Rangit?kei River, and isolated, nurtured, and analysed it with the help of scientists at Callaghan Innovation. It truly is a once-in-a-lifetime opportunity to be involved with something like this.
