Elusive Brewing’s Cabrillo is a vibrant American Pale Ale that pays homage to West Coast landscapes with a bright, sensory-forward profile. The hop bill is anchored by the classic pairing of Amarillo and Mosaic, delivering a punchy core of grapefruit zest, blueberries, and resinous pine. These are further elevated by top notes of Olicana and Citra, which introduce layers of tropical mango and floral citrus. It pours with brilliant clarity and a zippy, refreshing carbonation. The malt profile is lean and supportive, allowing the complex hop oils to lead, resulting in a crisp, aromatic experience that finishes clean and dry.

Appearance. Pale golden (approx. 6 SRM) with brilliant clarity. Pours with a moderately large, persistent white head that leaves fine lacing.

Aroma. Moderate-high hop intensity featuring distinctive notes of grapefruit, mixed berries, and bright tropical fruit. Low neutral-grainy maltiness provides a clean background, devoid of caramel, with a very clean fermentation profile and no esters.

Taste. Initial impression is hop-forward and zippy. Strong flavors of citrus rind and tropical fruit mirror the aroma, supported by a light, bready malt backbone. Moderate-high bitterness provides a firm structure without being harsh. The fermentation is very clean, allowing the hop character to shine through a dry, crisp finish with lingering hop resin.

Mouthfeel. Medium-light body with moderate-high carbonation that enhances the zippy character. Alcohol warmth is negligible at 4.8% ABV. Smooth, clean finish with no detectable astringency.
